Transport yourself to the jungle beaches of Goa with Sirena’s sharp ginger and cool yogurt.

Sail away to the west coast of India this week at Sirena, where our chefs are preparing a special Goan version of chicken vindaloo. Originally brought to India by Portuguese colonists as vinha d’alhos, Indian chefs made the dish their own by replacing the Portuguese wine marinade with local palm vinegar (and ratcheting up the chiles). Alongside homemade paneer in creamy tomato sauce, this hybrid dish is not to be missed.
