Here’s An Easy And Healthy Chocolate Chip Cookie Recipe

This recipe has chickpeas, not finished product of hummus, just chickpeas. Flour is used only to handle the dough. These cookies are special because they get to be very chewy and moist without adding butter, oil, or eggs.

These cookies taste like cookie dough. You can make them more or less chewy simply based on how round you place the unbaked cookie dough balls onto the cookie sheet.

For a vegan version, use agave or maple instead of honey and vegan-friendly chocolate chips.

Ingredients:

– 1 ¼ cups canned or fresh chickpeas, no excess water/ towel patted dry

– 2 teaspoons vanilla extract

– ½ cup peanut butter, preferably natural but standard Jif is fine as well

– ¼ cup honey

– 1 teaspoon baking powder

– ½ cup chocolate chips of your choice, I use chopped natural dark chocolate. You can replace chocolate chips with date slices (about 3 dates, or to taste).

– ½ cup almond flour, or flour of choice for handling dough.

The steps are really easy!

1. Preheat your oven to 350 Fahrenheit / 175 Celsius.

2. Put chickpeas in a food processor and process until very smooth, no chunks left. When smooth, add in the vanilla extract, peanut butter, honey, and baking powder. Process until well combined.

3. Stir in chocolate chips and other add-ins you like such as walnuts, almonds, cocoa powder, dates.

4. The mixture will be very thick and sticky. Pour in ½ cup almond flour gradually and mix with hands.

5. Form the balls of dough to be slightly bigger than a tablespoon amount and place them on a greased cookie sheet or with a slip on the cookie sheet. Keep the dough in ball form on the sheet, do not flatten yet.

6. Bake them for 5 minutes, then take them out and flatten each ball with a spatula or the bottom of a bowl. Then put the cookies back in until the edges are golden. Let them cool before picking up.
