Sweet and savory join forces in this week’s Persian menu at Makan.

Persian cuisine pioneered the integration of sweet fruits and spices into savory dishes, which eventually became a staple in royal palaces all over Western Asia. Makan’s menu this week shows off this delicious tradition, for instance in the Albaloo polow, a rice pilaf with black cherry, saffron, and juicy marinated chicken. Herbs are also an integral part of the Iranian table. Leafy herbs like parsley, coriander, fenugreek, mint, and others are represented in this week’s menu, like in the Persian omelette, or the khoresht ghormeh sabzi, a seven-herb lamb stew.

– Ashe reshte
Persian rice noodle and bean soup with herbs, topped with whey and caramelized garlic
– Masto Borani Esfanaaj
Sautéed spinach mixed with sour yogurt and garlic
– Omelette gojeh
Persian herb omelette with spices
– Khoresht ghormeh sabzi
Tender lamb shank simmered in a seven herbs stew with black-eyed peas
– Albaloo polow
Rice mixed with black cherry and saffron, served with marinated saffron chicken fillet
– Fereni esfahani
Rice flour and corn farina cooked with milk and rose water, served with your choice of maple syrup or grape syrup
