Makan lands on the verdant shores of Java this week, with an all-new Indonesian menu. The cuisine of the island of Java developed largely independently of foreign influence, except for a few dashes of Chinese, Indian, and even Arabic influences. Featured on the menu this week are sweet and tangy chicken, mixed vegetable coconut curry, and a very special curry made from the Chayotes melon (a member of the squash family). For dessert, enjoy rum-soaked banana fritters.
