Syrian chef Dima Al-Chaar returns to Makan with all the spring flavours of Damascus – and a modern twist.
Try her take on hurrak isba’o – in the form of a shooter! Her kibbeh sajieh is delicately flavoured with walnuts, chilli and dibs ruman, and the riz mfalfal main dish features minced beef, roasted chicken and fresh artichoke.
Dessert takes you straight to the streets of the Old City, with flavours of sahlab, kaak and cinammon.
