Born in Texas to an American mother and a Lebanese father, Kehdy was raised in Lebanon on her family\u2019s ancestral farm. She learned to harvest produce, churn cheese, and appreciate fresh, seasonal cuisine as she intently observed her grandmother and three aunts in the kitchen.<br \/>  <br \/>  Today, Kehdy lives in the West Country of England with her British husband. Her debut cookbook on Middle Eastern cuisine, <a href=\"https:\/\/www.amazon.com\/The-Jewelled-Kitchen-Bethany-Kehdy\/dp\/1848990626\"> The Jewelled Kitchen<\/a>, was published last summer and spotlights her modern approach to Lebanese cooking (you\u2019ll love her recipe on venison kebabs!). Kehdy also leads culinary tours across Lebanon through <a href=\"https:\/\/www.thekitchn.com\/need-a-vacation-take-a-short-trip-to-lebanon-with-this-video-189123?fb_action_ids=4861592659578&#038;fb_action_types=og.likes&#038;fb_source=other_multiline&#038;action_object_map=%5B497785750277315%5D&#038;action_type_map=%5B%22og.likes%22%5D&#038;action_ref_map=%5B%5D\" target=\"_new\" rel=\"noopener\">Taste Lebanon<\/a> and is founder of <a href=\"https:\/\/www.foodbloggerconnect.com\/\">Food Blogger Connect<\/a>, the world\u2019s leading international food blogging conference held annually in London. <br \/>  <br \/>  <img decoding=\"async\" src=\"https:\/\/www.beirut.com\/wp-content\/uploads\/2023\/05\/33340.png\"><br \/>  <br \/>  In an interview with Beirut.com, Kehdy tells us more about what she likes to whip up when she&#8217;s at home.<br \/>  <br \/>  <b>Beirut.com:<\/b> How often do you cook and eat at home?<br \/>  <b>Kehdy:<\/b> I work from home, so every day: breakfast, lunch and dinner, and then some.  <br \/>  <br \/>  <b>Beirut.com: <\/b>What are your fridge essentials?<br \/>  <b>Kehdy: <\/b>Dad\u2019s tomato paste, Dad\u2019s awarma, my homemade sun-dried tomato pesto (for in-a-hurry pasta lunches), preserved lemons, a tub of homemade hummus, a tub of Total\u2019s Greek Yogurt, mixed greens in the vegetable drawer\u2014there\u2019s always lettuce, rocket, and watercress, as I like to start a meal with a salad. I then pair what I have in the fridge with ingredients in my pantry: tomatoes, potatoes, onions, garlic, lemons and other seasonal vegetables, as well as eggs, pulses and grains galore. I also tend to buy meat in bulk or freeze freshly-caught fish. I have a chest freezer in my garage and will then defrost as needed. <br \/>  <br \/>  <b>Beirut.com:<\/b> As a chef, do you ever find yourself torn as to whether you should make something from scratch or buy it ready-made at the store?<br \/>  <b>Kehdy:<\/b> I have certainly purchased &#8216;ready-made,\u2019 as there are many days where I\u2019m up against a deadline. I\u2019ll usually ask my husband, on his way home, to grab a roast chicken from Tesco (they\u2019re actually quite tasty) with a three-bean salad. There are times when we\u2019ll run out of homemade hummus, and &#8211; I will be honest &#8211; I will resort to buying a tub from the supermarket.  <br \/>  <br \/>  <b>Beirut.com: <\/b>Could you potentially whip up a meal from your fridge\u2019s contents for 8-10 unexpected guests?<br \/>  <b>Kehdy: <\/b>Yes, I do it often, and you don\u2019t need an invite for dinner. I have a well-stocked pantry, which is indispensable, and a well-stocked chest freezer. <br \/>  <br \/>  <b>Beirut.com: <\/b>What\u2019s your policy regarding expiry dates?<br \/>  <b>Kehdy:<\/b> I didn\u2019t grow up on expiry dates (in fact, my dad\u2019s idea of expiry dates is a tad extreme), so I let my eyes and nose be the judge. Obviously, we all know that supermarkets have to be extra cautious with expiry dates. <br \/>  <br \/>  <b>Beirut.com: <\/b>Is there anything that\u2019s never allowed in your fridge?<br \/>  <b>Kehdy: <\/b>A &#8220;ready-to-eat meal,&#8221; you know, the plastic-wrapped, soulless food that comes ready for zapping in the microwave. That\u2019s where I draw the line. Oh, and those \u201ccorn\u201d meat products &#8211; I&#8217;m convinced that\u2019s got to be cancer in a box. And frankly, if you\u2019re vegetarian and eating that, then you\u2019re missing out on all the goodness Mother Earth has to offer.  <br \/>  <br \/>  <b>Beirut.com: <\/b>What do you think your fridge says about your character?<br \/>  <b>Kehdy: <\/b>I suppose my fridge and pantry would reflect that I\u2019m open, welcoming, flexible, spontaneous, creative and somewhat traditional. <br \/>  <br \/>
